THE SAUVIGNON BLANC THIS YEAR IS FROM FALSE CAPE ON THE EASTERN END OF THE ISLAND. IT WAS MACHINE PICKED. THE VINEYARD IS A BEAUTIFUL, SUSTAINABLE, DRY GROW SITE.

A SMALL AMOUNT KICKED OFF IN BARREL AND BY THE TIME IS WAS FERMENTING WE HAD COLD SETTLED AND RACKED THE OTHER PORTION WHICH WAS THEN INOCULATED WITH THE BARREL PORTION.

THE TANK WAS FERMENTED COOL TO RETAIN AROMATICS. THE BARRELS GOT TO A TEMP IN THE MID-TWENTIES, BUILDING COMPLEXITY AND TEXTURE.

THE BARRELS WERE TOPPED FROM THE TANK ONCE EVERYTHING WAS DRY AND STIRRED ONCE A WEEK FOR TWO MONTHS TO DEVELOP MORE TEXTURE BEFORE BLENDING.
