THERE’S ONLY FOUR 150M ROWS OF ROUSSANNE ON THE WHOLE OF KANGAROO ISLAND. IT GROWS EXCLUSIVELY IN OUR CASSINI VINEYARD. THERE WAS NO FRUIT IN 2021, AND THIS YEAR WE HAND-PICKED JUST SHY OF 600KG.

THE SKINS WERE A TOUCH SUN KISSED, SO THEY WERE QUICKLY SEPARATED FROM THE JUICE. WHOLE-BUNCH BASKET PRESSED, WITH 225L GOING STRAIGHT TO AGED FRENCH OAK AND THE REST TO A SMALL STAINLESS TANK.

THE TANK PORTION STAYED ON SOLIDS TO DEVELOP TEXTURE, WHILST THE BARREL KICKED OFF WITH ITS INDIGENOUS YEAST. WHEN THE BARREL STARTED FERMENTING, ABOUT 20 LITRES WAS SYPHONED INTO THE TANK PORTION. THE TANK PORTION WAS FERMENTED COOL.

ONCE DRY, THE WINE WAS BLENDED IN TANK. STAYED ON ITS FLUFFY LEES FOR ABOUT 5 MONTHS THEN PREPARED FOR BOTTLE.
