AFTER 10 YEARS AND NEARLY 100 DIFFERENT STOKE AND GUROO WINES WE HAVE DECIDED THAT CABERNET IS THE VARIETY FOR KANGAROO ISLAND.

IT GROWS SO WELL THERE AND THE COOL CLIMATE WITH THE MEDITERRANEAN INFLUENCE SEES A VERY LONG SLOW RIPENING PERIOD PERFECT FOR PHYSIOLOGICAL DEVELOPMENT BUT ALSO ENABLES THE ABILITY TO PICK EARLY FOR RETENTION OF GREAT NATURAL ACID BALANCE.

THE CABERNET CLONE IS CW44 AND HAS THICK SKINS AND SMALL BERRIES. IT IS VERY EASY TO EXTRACT FLAVOUR AND TANNIN AND THEREFORE WE DON’T INTERFERE TOO MUCH IN THE WINERY.

WE PUMPED THE WHOLE BERRY FERMENT OVER 4 TIMES AND PRESSED IF OFF WHEN DRY.
IT WENT TO 2ND USE FRENCH OAK TO HELP BALANCE THE FRUIT PROFILE AND PROVIDE SOME STRUCTURE.
